The journey of Carnitas Express is more than just a business history; it is the realization of a shared dream rooted in heritage, hard work, and a profound passion for hospitality. From its humble beginnings as a local taco shop to its evolution into a regional staple, the restaurant remains a testament to the power of family dedication.

Foundations and Humble Beginnings

The story began decades ago with the individual journeys of the Benitez family. Armando Benitez Jr. moved from Mexico to California in the 1970s, honing his culinary expertise and love for authentic flavors while working as a line cook. His sister, Eva, pursued a similar path in the 1990s, gaining essential hospitality experience as a waitress in Texas before eventually joining her brother to fulfill her dream of owning a restaurant.

InJuly 1997, Armando Sr. Armando Jr. and Eva officially partnered to purchase a modest taco shop known as Carnitas Express. What started as a small, focus edventure quickly transformed into a mission to provide high-quality, homemade meals to their community.

Expansion and Evolution

Through unwavering dedication, the original vision for Carnitas Express grew exponentially. The family oversaw a significant physical and operational expansion, including:

  • Scaling the Footprint: Growing the original space from 1,200 to 4,800 square feet.
  • Job Creation: Expanding the team from just four people to over 60 employees.
  • Strategic Growth: In 2005, the team was further strengthened when Doro Duran—who brought 20 years of experience from TGI Friday’s—joined the family business.
  • New Horizons: Shortly after Doro joined, the family opened a second location in Murrieta, which achieved immediate success.

A New Era: VIP’s Café

In response to the shifting landscape following the COVID-19 pandemic, the restaurant transitioned into a fresh concept: VIP’s Café. While the name and concept evolved, the commitment to variety and quality remained. Today, the menu features a diverse range of offerings, from signature Mexican cuisine and hearty American burgers to specialized breakfast items like fresh berry crepes.
